Nigerian, Yoruba Cuisine, Amala made from fresh green plantain. Traditionally, Amala is made from dried green plantain flour. But if all you have is green fresh plantain, you will need to blend that with a little bit of water in a blender to produce a fluid or paste that is then placed in a pot and prepared like regular Amala. I always add a teaspoonful of olive oil to prevent it from sticking to the pot. Plantain contains resistant starch which is good for blood glucose control in diabetics.
