Roasting Eggplants in Trinidad and Tobago
Three eggplants or melongene being roasted on coals in a metal coal pot in Central Trinidad, West Indies. After roasting, the pulp was removed and seasoned with garlic, onion, peppers, salt and oil, to make baigan choka.
